Our Story

Gilbert Saenz is the Owner and Pitmaster of BurntOut BBQ, a craft Texas barbecue restaurant opening in Summer 2024 in Mission, Texas. Originally from San Isidro, Texas, Saenz spent 13 grueling years in the oil industry, working at least 70 hours per week and on the few days he had off, he would dedicate time to his real passion – barbecuing.

After learning smoking techniques from some of Texas Monthly’s top barbecue pitmasters and practicing the craft for six years, Saenz decided to name his restaurant BurntOut BBQ as an homage to the dedication and spirit he maintained for years in a highly demanding industry.

The BurntOut BBQ team is proud to serve authentic Central Texas-style barbecue with a South Texas kick for the entire community to enjoy.
